Coffee + Chocolate = ❤️

These healthy sweet mini bites taste like chocolate and coffee and are the perfect snack for in between meals. They are vegan, without flour and can be prepared ahead and stored in the fridge for a few days. These coffee & chocolate bites also make a great dessert when you’re craving something sweet after lunch or dinner. Optionally, these treats can be topped off with flaky sea salt at the end. But that’s a matter of taste – I personally think chocolate with a little sea salt is super tasty – do you? For the recipe simply keep on reading.. ☕️ 

Mini Schoko Bites

Recipe

Ingredients:

  • Wet Ingredients
    • 1 ripe banana ca.150 g (blended) 
    • 30g sweetness of choice, e.g. maple syrup
    • 50g nutbutter, e.g. pb 
    • 75ml plantmilk 
    • 1 chia egg (10g chia seeds + 30ml water)
  • Dry Ingredients 
    • 150g oat flour mixed with 1,5 tbsp cocoa powder
    • 1-2 tsp instant coffee
  • Add-ins
    • dark chocolate chips
  • Topping: 
    • 30g dark chocolate mixed mit 1 tsp coconut oil + 1/4 tsp instant coffee 

Kitchen Tools: 

  • Blender 
  • Small baking tin 

Method:

  1. For the Chia Egg, simply place the chia seeds and water in a small bowl and set aside.
  2. Place all other liquid/wet ingredients in a blender and blend until everything is combined. Pour this mixture into a bowl.
  3. Now add the chia egg and stir.
  4. Then gradually incorporate the dry ingredients. 
  5. Now fold in the chocolate drops and pour the whole mixture into a greased or baking paper lined pan and bake at 180°C for about 15 minutes.
  6. Let cool and prepare the topping. For this, melt chocolate and coconut oil and add the pinch of instant coffee. 
  7. Spread on the pastry and cut into small pieces – optionally add coarse salt here.

Healthy Swaps

Chia Egg instead of an egg – to bind the mass and obtain a compact result.

Oat flour instead of flour – oats as a healthy source of energy. 

Banana and sugar alternatives instead of refined sugar – Among other things, a ripe banana is used here to give natural sweetness. But beware: of course, the chocolate drops and the chocolate icing contain industrial sugar – so use only a little of it if it’s meant to be a healthy snack. It’s all about the right balance 🙂

Storage

Be sure to store in the refrigerator.  You can enjoy them for a few days without any problems.
