Summer Salad with Grilled Nectarine & Burrata

Fresh Summer Salad

This salad is for everyone who likes to eat a refreshing and cold meal during these hot temperatures. You will love this salad. An Italian tomato burrata salad with a touch of summer that creates a lil flavor explosion. The grilled nectarine adds a special flavor and is a real game changer in this recipe. 

A combination of:

  • Fresh 
  • Spiciness (from the arugula)
  • Sweet / Sour 
  • Crunch & Creamy 

= Dreamy!!

Recipe

Ingredients:

  • Salad
    • Handful of baby spinach
      handful of arugula
    • about 5 sweet mini cherry tomatoes
    • 1 nectarine
    • 1/2 burrata
  • Topping & Sauce
    • 1,5 tbsp pine nuts (pan roasted)
    • Vinegar & oil
    • Salt & pepper  
    • Optional: basil leaves

Kitchen Tools: 

  • Grill pan 
  • Grill tong to flip nectarine

Method:

  1. Slice the nectarine and grill for 2-3 minutes per side.
  2. Put all salad ingredients in a bowl, add the grilled nectarine and then dress with olive oil and vinegar.
  3. Add salt and pepper to taste.
  4. Top with toasted pine nuts and optionally add basil leaves.

Servings

This quantity is enough for 1 person as a main meal or for 2 if served as a side dish. I recommend a piece of toasted sourdough baguette with it. 

Tips

Burrata – it’s very soft and creamy inside, so it’s best to just pluck it into small pieces.

Pine Nuts – when roasting these super delicious pine nuts develop their full flavor. Simply heat a pan without oil and roast the pine nuts in it. Attention, they can burn quickly! 

Olive Oil – use extra virgin olive oil for this salad. In combination with arugula, tomatoes and burrata a dream combination. 

Tomatoes – With any salad you should make sure to use really only super tasty and ripe tomatoes, otherwise the salad becomes rather inedible. The tasty tomatoes are usually the ones that are a bit more expensive 🙁 , but in my opinion it’s worth it!
