Summer Snack Recipe
The temperatures are rising and so is the desire for something cold and refreshing. These super fresh frozen yogurt cups are the perfect snack or dessert for hot days. They are super easy to make and perfect to store in the freezer. You can already make them with the fewest ingredients. The base is made of cornflakes and peanut butter, and the center is made of plain yogurt (note: make sure to use cornflakes without added sugar here).

Ingredients:
- Base:
- 40g no added sugar cornflakes
- 20g Peanut Butter mixed with 10g coconut oil
- Frozen Yoghurt Cup layer:
- 300g yoghurt of choice
- 25g sweetness of choice (if you use artificial sweetener, adjust accordingly)
Kitchen Tools:
- Muffins tins or ice cube tray
Directions:
Pour cornflakes into a bowl.
Heat peanut butter with coconut oil and pour over cornflakes.
Mix everything together with a wooden spoon and crush it a bit
Transfer cornflakes mixture into molds about 1 tablespoon per mold (muffin tins or ice cube molds work well for this)
For the yogurt layer, just mix together yogurt and sweetener of choice and taste to see if it’s the sweetness you want.
Pour on the cornflakes layer and top with more cornflakes.
Freeze for at least 2 hrs and enjoy!
Store in the freezer. Enjoy!

Vegan Frozen Yogurt Cup
To keep these frozen yogurt cups vegan, use coconut yogurt or soy yogurt.
Variations
Instead of using plain yogurt, you can use vanilla or a fruit yogurt. And if you don’t want to use cornflakes, how about rice puffs, puffed quinoa or spelt flakes?
