Balanced Snack or Dessert Idea

One of my favorite creations are these little snack bars, where all the ingredients are simply thrown into the blender and within a few minutes the cake is ready to go into the oven. Goes super fast, is soooo simple and makes one’s life pretty easy if you ever feel like a healthy snack or dessert. Today’s combo is are Peanut Butter Protein Bars and includes peanut butter in the batter and also as a topping, a dream for any peanut butter lover. The ingredients for these peanut delights are almost all healthy. Almost, because today’s topping is rather semi-healthy, but since it’s just a small amount and the rest is healthy, I don’t see a problem there. Sweetened with ripe bananas, among other things, which is why these cakes also taste a bit like banana bread. Vegan chocolate chip cookies are used as topping here. This kind of recipe can of course be made 100% clean. Some variations I’ve tried before are recommended at the end of the recipe.

I eat these mini treats either as a snack between breakfast and lunch, or as a dessert in the evening. I make one of these healthy cakes almost every week, either on Sundays or Mondays after the weekly grocery shopping, so I’m set for a few days. I highly recommend this as Meal Prep or in this case Snack Prep as it can save you a lot of time and may prevent you from eating unhealthy snacks. But enough about my habits, it’s time for the Peanut Butter Protein Bars recipe.

Recipe

Ingredients:

  • 2 medium sized ripe bananas
  • 100g yoghurt
  • 50ml oatmilk
  • 20g peanut butter
  • 15g maple syrup 
  • 50-60g oats*
  • 20g vanilla protein
  • 1/2 -1 tsp baking powder
  • pinch of  cinnamon 
  • Topping
    • vegane chocolate chip cookies
    • 1 tbsp + 1/2 tbsp coconut oil, heated and mixed 
* Depending on how big the bananas are, the amount of oats should be adjusted if necessary – you should end up with a thick batter.

Kitchen Tools: 

  • Blender 
  • Small baking tin
  • Oven

Anleitung:

  1. Just throw all the ingredients in the blender and mix until all the ingredients are evenly combined and a homogeneous batter is created  
  2. Pour into a greased or with parchment  paper filled baking tin.
  3. Add cookie pieces.
  4. Bake for 22 minutes on 180°C 

  5. While the Peanut Butter Bars are cooling, mix the coconut oil and peanut butter together and heat briefly. 
  6. Top with peanut sauce & it’s done! 

I prefer to eat them warm, so recommend snacking on a piece right after some cooling time. Enjoy!

The recipe makes 6-9 pieces, I recommend doubling the recipe if you want it to last for several people and several days.

Variations

As promised, here are variations on how you can customize this recipe.

100% clean – Looking for a snack recipe with only good ingredients? Then avoid the cookie pieces and depending on whether you want to cut calories, leave out the Peanut Butter Sauce topping.

Vegan – The recipe itself is already vegan if you use vegan protein powder and a plant based yoghurt

Other variations – I’ve already tried quite a few combinations here. E.g. with raspberries, blueberries, chocolate chips, white chocolate drops, vegan marshmallows. The extra ingredient can either be folded in at the end of the batter preparation or can just be used as a topping.
