Mini Low-carb Pizza 🇮🇹
A combination of Parmigiana di Melanzane + Pizza = a dream! With the small difference that these sweethearts have fewer calories and still taste great. Really a must-try, if I may say so. The pizzettes can be prepared in just a few minutes and are a perfect snack or can even be eaten as lunch or dinner, but then maybe in combination with another side dish. You need very few ingredients for this, probably you already have most of it at home anyway. Pronto per Pizzette di Melanzane? Then let’s go!
Recipe

Ingredients:
- Eggplant, sliced
- Delicious tomato sauce
- Mozzarella
- Spices and herbs
- basil, oregano, salt
Kitchen Tools:
- Oven
Directions:
- Place the eggplant slices on a baking sheet and add tomato sauce.
- Then sprinkle with oregano and add mozzarella cheese.
- Bake for about 15-17 minutes in a preheated oven at 180°C.
And the mini low-carb pizzettes are ready to be enjoyed!

Depending on whether these low carb pizza treats are eaten as a main meal or only as a side dish or snack, the amount should be adjusted. From 1 medium eggplant yields about 1-2 servings.
