How about this super light low calorie cheesecake in blueberry & lemon flavor? And by low calorie I mean only 70 kcal per slice – great, right?
It’s also super refreshing and absolutely not heavy on the stomach. Plus, it’s easy to prepare with just a few ingredients and tastes great – perfect for summer.
Recipe
- Servings: 9
- Duration: ca. 2h*

Ingredients:
- 2 eggs
- 500 g low fat quark (or low fat greek yoghurt)
- juice from 1/2 lemon + zest
- Sweetness of choice, here: flavdrops in cheesecake flavor
- 1 tsp baking powder
- 1 pack of vanilla custard powder or 40g starch (if you use starch, add 1 tsp vanilla)
- handful of blueberries
Kitchen Tools:
- Small baking pan
- Blender (or whisk)
Directions:
- Whisk eggs until foamy
- Add Quark and keep mixing
- Add lemon juice + zest + sweetener, if you like it very sweet and don’t like natural sour lemon flavor you need to add a good amount of flavdrops or other sweetener of choice
- Add dry ingredients and mix til you get a smooth batter
- Add a handful of blueberries and pour into a baking pan
- Bake for 30 min on 180 °C and let cool completely
If desired, decorate with a little powdered sugar & you’re ready to enjoy your low calorie cheesecake! Bon appetit.

- Tip: It is best not to remove the cake from the oven immediately after the baking time and let it rest for a few more minutes in the turned-off oven with the door open.

This blueberry lemon cheesecake can be cut into 9 small pieces of 70 kcal. However, these are very small pieces. If you plan to make this cake for several people, I recommend you to use double the amount.
Variations
Are you not a huge fan of the blueberry-lemon combination? No problem, you can simply replace the blueberries with raspberries, strawberries, blackberries or cherries and the lemon with orange if you prefer.
Storage
It is best to store the cheesecake in the refrigerator and consume it within 2-3 days after preparation.
